Just as haute Cantonese cuisine hits Shanghai with the opening of Ming Court at the Langham Xintiandi, it’s set to make a splash in Singapore, with two-star Michelin chef Cheng Kam Fu set to take over at Feng Shui Inn at Resorts World Sentosa from April 28-May 7. Cheng, chef-owner of Celebrity Cuisine Restaurant in Lan Kwai Fong, is known among Hong Kong foodies for his unique spins on local favorites, which Business Times Singapore call “decidedly less clumsy than [his] restaurant’s name.”

After serving 20 years as the personal chef of the late textiles tycoon Lim Por-Yen, Cheng struck out on his own in 2007, quickly making fans of the likes of casino impresario Stanley Ho, Hong Kong chief executive Donald Tsang and actor Jackie Chan while picking up a couple of Michelin stars along the way.

Signature dishes that Cheng plans to whip up at Feng Shui Inn include crispy fried chicken wing stuffed with Imperial Bird’s Nest; Chuanbei crocodile stew; prawn paste-stuffed, deep-fried ‘Sri Lanka’ crab claw; “Fu Ge” fried rice with Jinhua ham from Zhejiang Province; and Chinese wine-infused baked farm chicken. Chef Cheng’s specialties will be presented in six- and nine-course set menus as well as a la carte, and are sure to please some of the Lion City’s most discriminating palates.
